INGREDIENTS
Serves 6 people
6 large sweet potatoes
4 cups of chopped kale
100g of fresh feta cheese
1 cup chopped basil and chives
Extra virgin olive oil
Salt/pepper to taste
METHOD
- Preheat oven to 180 degrees.
- Scrub potatoes, wipe dry and place in our oval roasing dish. Rub with olive oil and sprinkle with salt and pepper. Bake 45-55 minutes, or until potatoes are tender when pierced with a fork.
- While potatoes are baking, in our skillet, toss the chopped kale in olive oil, salt and pepper. Over medium heat, sauté the kale until slightly wilted for about 5 minutes.
- Once baked slice the sweet potatoes in half lengthwise. Use a fork to loosen the potato then add the kale, chopped feta, and herbs. Return to oven for 10 -12 minutes to melt the feta. Drizzle with olive oil and serve immediately!
