STUFFED SWEET POTATOES WITH FETA AND KALE

INGREDIENTS

Serves 6 people

6 large sweet potatoes

4 cups of chopped kale

100g of fresh feta cheese

1 cup chopped basil and chives

Extra virgin olive oil

Salt/pepper to taste

METHOD

  1. Preheat oven to 180 degrees.

  2. Scrub potatoes, wipe dry and place in our oval roasing dish. Rub with olive oil and sprinkle with salt and pepper. Bake 45-55 minutes, or until potatoes are tender when pierced with a fork.

  3. While potatoes are baking, in our skillet, toss the chopped kale in olive oil, salt and pepper. Over medium heat, sauté the kale until slightly wilted for about 5 minutes.

  4. Once baked slice the sweet potatoes in half lengthwise. Use a fork to loosen the potato then add the kale, chopped feta, and herbs. Return to oven for 10 -12 minutes to melt the feta. Drizzle with olive oil and serve immediately!
