INGREDIENTS
Serves 2 people
2 heads radicchio
1 tablespoon olive oil
1 tablespoon honey
2 tablespoons balsamic vinegar
Salt and pepper to taste
METHOD
Wash, dry and core the radicchio
Tear the radicchio into bite-size pieces
Add to a hot pan with the olive oil
Add the honey and balsamic vinegar
Cook until tender
Remove from heat and add salt, pepper, fresh lemon, fresh thyme and a small drizzle of olive oil
Turn this salad into a more substantial main by adding grilled steak, chicken, or salmon.
