PALEO PIZZA

INGREDIENTS

Serves 2 people

2 1/2 cups of almond flour⁠

1/2 tsp baking powder⁠

2 tsp of dried oregano⁠

1 crushed garlic clove⁠

1 tsp of sea salt and pepper⁠

3 large organic eggs⁠

2 tbsp olive oil⁠

Tomato passata⁠

1 large buffalo mozzarella, chopped⁠

1/2 cup fresh basil leaves⁠

Your choice of toppings⁠

METHOD

  1. Preheat the oven to 200ºC or use a pizza oven.⁠
  2. In a large bowl, whisk together almond flour, baking powder, oregano and sea salt.⁠
  3. In a small bowl, whisk together eggs and olive oil and pour into dry ingredients to make a dough.⁠
  4. Transfer the dough to a piece of parchment paper then roll the dough until ¼-inch thick.⁠
  5. Slide bottom parchment paper onto a baking sheet and bake until crust is lightly golden (10 mins).⁠
  6. To make the sauce, stir the passata on medium heat. Add the garlic, oregano, salt and pepper to taste.⁠
  7. Spread pizza sauce over crust, leaving a ½-inch border.⁠
  8. Top with buffalo mozzarella followed by your choice of toppings and basil leaves, then return to pizza oven or conventional oven on grill.⁠
  9. Bake until cheese is melted and crust is golden (5-10 mins).⁠
