INGREDIENTS

2 1/2 cups of almond flour
1/2 tsp baking powder
2 tsp of dried oregano
1 crushed garlic clove
1 tsp of sea salt and pepper
3 large organic eggs
2 tbsp olive oil
Tomato passata
1 large buffalo mozzarella, chopped
1/2 cup fresh basil leaves
Your choice of toppings
METHOD
- Preheat the oven to 200ºC or use a pizza oven.
- In a large bowl, whisk together almond flour, baking powder, oregano and sea salt.
- In a small bowl, whisk together eggs and olive oil and pour into dry ingredients to make a dough.
- Transfer the dough to a piece of parchment paper then roll the dough until ¼-inch thick.
- Slide bottom parchment paper onto a baking sheet and bake until crust is lightly golden (10 mins).
- To make the sauce, stir the passata on medium heat. Add the garlic, oregano, salt and pepper to taste.
- Spread pizza sauce over crust, leaving a ½-inch border.
- Top with buffalo mozzarella followed by your choice of toppings and basil leaves, then return to pizza oven or conventional oven on grill.
- Bake until cheese is melted and crust is golden (5-10 mins).
