INGREDIENTS
Chicken thighs, skin on
Salt
Fresh thyme
Lemon juice
METHOD
- Simply place salted chicken thighs skin down in a cold Ondine casserole pan.
- Turn on low to medium heat.
- Cook until the skin becomes crispy.
- Turn over and cook through.
- Season with fresh thyme and a splash of lemon.
- Serve with brown rice and steamed vegetables or sauteed radicchio.
