INGREDIENTS

Chicken thighs, skin on

Salt

Fresh thyme

Lemon juice

METHOD

  1. Simply place salted chicken thighs skin down in a cold Ondine casserole pan.
  2. Turn on low to medium heat.
  3. Cook until the skin becomes crispy.
  4. Turn over and cook through.
  5. Season with fresh thyme and a splash of lemon.
  6. Serve with brown rice and steamed vegetables or sauteed radicchio.
