NO BAKE PALEO PROTEIN BARS

INGREDIENTS

1/2 cup of raw cashews, soaked overnight

1/3 cup coconut butter

1/4 cup coconut cream⁠⠀

2 tbsp maple syrup

1/2 cup of cacao powder⁠⠀

10 Medjool dates, soaked in hot water.⁠⠀

1 tsp sea salt

1/2 cup of chopped cashews

2 bars of 80% raw dark chocolate, melted⁠⠀

METHOD

  1. Blend together the soaked cashews, coconut butter, coconut cream, maple syrup and cacao powder in a high-speed blender then pour into a baking tray deep enough to cut into chunky chocolate bars.⁠⠀
  2. Place in the freezer for about half an hour then remove and cut bars into your size of choice.⁠⠀
  3. Place back in the tray and drizzle over the melted dark chocolate. Sprinkle with the chopped nuts and sea salt and freeze once again until hard. 
  4. Store in the fridge once they are ready and enjoy a grain and dairy free treat.⠀
